
So a few weeks ago I spotted a recipe for cheesecake pops and decided to try them out. You will want to make these 2 days in advance and if you're looking to spend less then make this when cream cheese goes on sale because its quite expensive.
Ingredients
1 (8 oz.) pkg. cream cheese
1/4 cup granulated sugar
1 egg
1/4 tsp vanilla
semi-sweet chocolate, chopped
toppings to sprinkle on the pops (chopped nuts, melted chocolate to drizzle, sprinkles etc.)
Method

Preheat your oven to 350 (Fahrenheit) line a loaf pan or a 6 by 6 spring form pan with wax paper then grease it, put it aside. Next mix the cream cheese, vanilla, and sugar with an electric mixer; slowly beat in the eggs. pour this into your pan. Bake for 30-40 minutes or until the center it set, but still jiggles slightly. after it's baked place in the freezer for 30 minutes or the fridge for 2 hours. Next using a small ice cream scoop roll balls of the cheesecake. Place them on a wax paper lined baking tray, dip your lollipops in chocolate then push into the balls. The chocolate will act as a glue and hold the ball and stick together. Freeze for 15 minutes. Remove from the freezer and dip in the melted chocolate and add your toppings. Push the pops into a syrafoam block and leave until the chocolate sets. Enjoy!
