This recipe is very simple, but keep in mind that there is lots of freezing, so it may be a bit time-consuming. Ice cream cakes are great for parties because you can make them ahead of time and keep them in the freezer, but I would not recommend leaving it in the freezer for a very long period of time (e.g 2 weeks+) because the flavor will be different and not as delicious.

Ingredients
1 quart of vanilla ice cream,softened (I used about 3/4 of the tub)
1 pkg. Oreo cookies (I probably used about 18 cookies)
2-3 extra Oreo cookies for garnishing
2/3 cup Oreo cookie crumbs (place cookies in a freezer-bag and beat with a rolling pin until fine crumbs)
3 tbsp melted butter/margerine
1/2 cup semi-sweet chocolate chips
Method
1. To make the crust, combine the Oreo cookie crumbs with the butter, it should feel like wet sand. Press the mixture into the bottom of an 8" spring-form pan, if you don't have a spring-form pan just line a regular, round, cake pan with foil. Bake the crust for 5-10 minutes at 350° Fahrenheit.
2. While the crust is baking, chop 5-6 Oreo cookies into small pieces. Mix together 1 and 2/3 cup of the softened vanilla ice cream and chopped cookies.
3. Arrange Oreo cookies along the sides of your pan. Spoon the ice cream and cookies mixture on top of the cooled crust, it should only come up halfway of the pan. Sprinkle additional chopped cookies and chocolate chips over the ice cream. Place in the freezer for 1-2 hours.
4. Once the layer of cookies and cream ice cream has set, remove it from the freezer. Spoon over plain vanilla ice cream, just until it reaches the top of the pan. Garnish the center with more chopped Oreo cookies and freeze until ready to serve.
